They started us off with a lovely creamy Argentinian cheese bread. It was a perfect two bites of slightly salty goodness. Just the right firmness and a satisfying crispness to the crust. Nothing to see here except a small bowl of slightly warm bread. Perfect chew and crunchy crust. Not show, the bowl of perfect, smooth, and spreadable butter with a small sprinkle of large salt crystals giving each bite little explosions of salty heaven. Seen here, the remnant of an East Coast Oyster. Hey, I'm still learning this stuff. It came out with a small plate of toppings: fresh grated horseradish, a mushroom brine, and lemon wedges. The seaweed garnish added a perfect cleanser. The Box Cutter - Rye and Brandy blend, Rosso Vermouth, Coffee digestif, truffle, and coco nibA little sweet for my taste but the truffle was a nice touch. Sous Les Mers - Lapsang honey, bianco vermouth, lime, CO2, nori infused gin blendMake sure to shake it a little to watch the seaweed sway in the current. Swiss Chard - bright and tangy with lime and seaweed. A great cut for the fattiness of the marrow in the... Grilled octopus with bone marrow. The octopus had a perfect firmness, not tough, with a ocean freshness. The marrow, though I couldn't really understand its inclusion, added that beefiness to the toast that we've come to love in the modern snout and tail movement. The "pebble" potatoes and herbs liven up the whole dish. Fusilli with lamb shoulder, slow cooked tomato with turmeric. The pasta was good, but the lamb was amazing. Perfect, tender, brilliant flavor. Will have again. Chocolate truffles. We didn't have room for a proper desert but these arrived complimentary. Absolutely perfect. Keith Anderson
