Vietnamese Chiken and Rice Soup

Since I have known my wife whenever anyone is sick the soup comes out. It almost makes me want to get sick. 

In this instance chicken thighs are simmered for about 2 1/2 hours with salt and sugar. This cooks the chicken and makes an incredible broth. 

Using the broth she stirs in jasmine rice and lets it cook low for about 30 minutes. 

Add back in the chicken with green scallions and serve with more scallions and parsley. 

Heaven in a bowl.
